A baked corn casserole is a must-have at every Thanksgiving or holiday dinner! Not only is it the perfect comfort food, it can be made with a variety of ingredients. While there are many classic options – such as a green bean casserole or a breadcrumb stuffing - you should try to shake it up this year with another crowd-favorite. Our corn casserole recipe – made with bacon and cheese – is just the crowd pleaser that you’re looking for! We love this recipe because it’s easy to make – only about a 20-minute prep time and a 30-minute cook time – and super delicious! The other great thing about this dish is that you can switch up the ingredients listed, such as the bacon, for your favorite foods. Try a chicken thigh or turkey breast for a healthier mix, or try some ham and sausage for extra flavor. You can even add a little cayenne pepper as a nice flavor boost to literally spice your dish up! Don’t be afraid to get a little creative with it, your experiments can lead to a huge success! Ingredients 2 1/2 pounds frozen corn kernels 2 eggs ¼ cup of flour 6 tablespoons unsalted butter, room temperature 2 ½ tablespoons sugar ¼ teaspoon cayenne pepper 8 oz of cheddar cheese 2 tbsp chives, chopped 1 chicken thigh, cooked and shredded, or 4 pieces of bacon, cooked and crumbled 1 cup of breadcrumbs Kosher salt and freshly ground pepper, to taste Supplies Food Processor or Blender Medium-Sized Bowl Baking Pan Medium Non-Stick Frying Pan Directions Preheat oven to 325 degrees Place 2 cups of corn, eggs, flour, sugar, cayenne and 4 tbsp butter in your food processor or blender. Pulse 4-5 times, until mixed well. Pour the creamed corn mixture into medium size bowl Add rest of the corn, bacon, chives and ½ of the cheese. Stir these ingredients until they’re mixed together well. Grease up your baking sheet and then pour the mixture in evenly. Top it off by sprinkling the other half of the cheese. Bake for 30 minutes. While the casserole is baking, heat a medium nonstick pan to medium high heat. Melt 2 tbsp butter in the pan. Add the breadcrumbs, stir constantly, until golden brown. When the casserole is about 10 minutes away from being done then take out and sprinkle on as many breadcrumbs as you want. Bake until golden brown. Serve warm.
