You can cook this in the morning for breakfast, serve it as an appetizer at your next party, or prepare it for work the night before. All ingredients in this healthy recipe were especially chosen to ensure optimum health benefits ideal for the upcoming summer season. Eggs: While lightweight and easy to eat, eggs are also packed with several vitamins and are a great food to keep full with few calories. Asparagus: Full of antioxidants and amino acids, asparagus improve your mood and prevent bloating. Arugula: Great for detoxing your body, arugula also improves your bone and immune system health. *Recipe is for a single serving. Ingredients 3 Eggs 1/4 cup Milk 1/4 cup Breadcrumbs 1 ounce Gouda cheese 2-3 spears Asparagus 3/4 cup Chopped Arugula Salt Pepper 2 tsp. Vegetable Oil Large Frying Pan Directions On low-medium heat, pour the Vegetable Oil in a Large Frying Pan. In a mixing bowl, whisk Eggs. Stir in Milk, Breadcrumbs, and Gouda cheese. Add in Asparagus and Arugula. Season with Salt and Pepper as desired. Turn up the stove temperate now to medium-hot and pour the mixture into the frying pan. Be careful when pouring as the oil may splash. Let the mixture sit until the bottom appears a light golden brown. Then flip, once again remaining cautious of splashing oil. If you need to, split the frittata in half to flip in smaller portions. Once the other side is golden brown and the frittata appears to be fully cooked (apx. 3-5 minutes total), remove it from the Frying Pan and place it on a dish covered with two Paper Towels. Allow the oil to be soaked up. Then cut into small square pieces and enjoy!
