The holidays have arrived and now it’s time to start cooking and baking! You’re probably looking for the perfect main course to lead up to the delicious pumpkin dessert you prepared, but look no further. We put together a hearty and healthy breadcrumb stuffing recipe that is low carb, but extra tasty. Stuff it in the turkey cavity or just eat it as its own meal, everyone (including children) will love it! Serving Size: 12-16 People Prep. Time: About 90 minutes. Ingredients ½ lb. Cauliflower ¾ lb. Breadcrumbs 2-3 cups Chicken Stock 1 cup Celery 1 clove Garlic, chopped 1 Onion ½ lb. Ground Sausage 3 tbsp. Extra-virgin Olive Oil 1 tsp. Salt ½ tsp. Pepper 2 Eggs ¼ cup Melted Butter *Optional ¼ cup Pine Nuts Supplies 2 Large Sauté Pans 1 Large Mixing Bowl 1 Large Baking Dish 1 Small Bowl Instructions Preheat oven to 375 degrees F. On medium heat, sauté the Sausage until cooked. Drain some of the oil. In another pan on medium heat, sauté the Olive Oil, Onion, Celery, and Garlic. Add Salt and Pepper as desired. About 10 minutes. In a mixing bowl, combine Cauliflower and Breadcrumbs, and stir until well distributed. Beat two eggs in a separate bowl until yolk and whites are blended. Add to the mixture. Add in Chicken Stock in ¼ cup increments, stirring in gradually until completely absorbed by the bread mixture (be careful the mixture does not become mushy). Add in the sauté mixture from Step 3 to the mixing bowl. Combine thoroughly. Use the Melted Butter to lightly grease the baking dish, as well as a piece of aluminum foil, and pour any leftovers into the bread mixture. Stir in pine nuts if desired. Pour the mixture into the baking dish and cover with the aluminum foil mentioned in Step 6. Heat in the oven for 20 minutes. Remove the aluminum foil and continue baking for another 30 minutes. Remove from the oven and let sit for at least 10 minutes before serving. Looking for an even healthier alternative? In step 8, simply substitute a baking pan for a mini-muffin tray. You may need more Chicken Stock and Eggs to ensure the mixture does not fall apart.
