Now that spring has arrived, enjoy one of our favorite spring-time recipes - Pasta Primavera. Light and healthy, all of these delicious vegetables are in season and pair well together. This healthy recipe was specifically created with the intention of benefiting each individual as much as possible, as all ingredients together make for a well-rounded diet that has been proven to benefit most areas of the body and mind. Artichokes are a great source of fiber, and are packed with several vitamins and minerals. Their antioxidant power has enabled to them to prevent cancer and cardiovascular disease, control diabetes, and improve skin health. Broccoli, while also a source for diabetes control and cancer prevention, is great for improving brain health, slowing the aging process, and improving your metabolism. Cherry tomatoes are a great diet staple if you are trying to lose weight as they keep you full even though they are low in calories. Cherry tomatoes have been proven to prevent hair loss, act as sun protection, and increase eye sight. Ingredients Water 3 tbsp. of Salt 1 lb. Penne pasta Olive Oil Pepper 1 tsp. of Minced Garlic 1 cup Artichoke Hearts 1 cup of Broccoli 1/2 cup of Cherry Tomatoes, halved Parmesan Cheese Directions Start by boiling Water in a large pot, stirring in Salt for added flavor. Add the Pasta in once the Water has boiled, approximately 8 minutes. Continually stir to prevent the pasta from sticking. Heat a sauté pan on medium heat and add Olive Oil and Minced Garlic. Stir it around the pan so the garlic becomes almost clear. Drain the Pasta, but keep 1/2 cup of the water to add to the sauté mixture. Add in the Broccoli. Stir again. Add in artichoke hearts. Turn off heat, but keep stirring. Pour the Pasta over the mixture in the sauté pan and stir again. Add pepper for flavor. Stir in Cherry Tomatoes. Add Parmesan Cheese and stir in pan.
