Spring time is approaching! Which means that strawberry’s peak season is right around the corner. Buying strawberry’s in the middle of their peak season means that they are usually sold at a cheaper price. So, take advantage of that by trying this yummy, feel good, recipe. This salad makes for a wonderful side dish when you are eating family style. It’s bright, tasty, and will wash all the winter blues away! This recipe will keep you on track with your health goals for this year as well. Not to mention, it is also a quick dish that you can toss together in under 15 minutes. Sounds perfect right? Serving Size: 4-6 Total Time: 15 minutes Ingredients: 10 oz baby spinach 3 cups strawberries (halved) 1 small handful mint leaves (chopped) 4 oz goat cheese (crumbled) ½ cup pine nuts 1 Avocado (diced) Balsamic glaze Instructions: Step 1: Rinse the spinach and tear into bite size pieces. Place aside in a large bowl. Step 2: Then cut the tops of the strawberries, and proceed to slice them in half. Step 3: The next step is to break out the mint and chop in roughly. You don’t need to go overboard with the mint. Only grab a small handful of leaves, that will be more than enough for the desired flavor there. Step 4: Break down the avocado. First, cut it in half, lengthwise. Then dig out the seed and separate the fruit from its shell. Dice the fruit into ½ inch pieces. Step 5: Next, you want to combine all the salad ingredients into the bowl of spinach. Add to the bowl – the strawberries, mint, goat cheese, avocado, and pine nuts. Toss until combined well.
